Not your grandmother’s pimento cheese sandwich

Notes

When I think of a pimento cheese sandwich I think of sweet old ladies throwing a luncheon with little finger sandwiches on Wonder Bread. Now, think of those sandwiches on steroids. This is what you get. If you really want to get serious, throw in a grilled hamburger patty. Simply mouthwatering.

Method

1 Serving

Slather one side of each slice of bread with a
light coating of mayo (yes, more mayo). In a
frying pan place the bread mayo side up and toast
on medium. After a few minutes flip bread over and
spread pimento cheese onto each slice. Place bacon
slices on one half and tomato slices on the other.
Grill until bread is crispy and golden. Press
together and enjoy your heightened cholesterol
levels. Slice it in half and share it with a
friend, it’s that kind of sandwich.

Ingredients

sourdough bread 2 thick slices
duke's myaonnaise 2 teaspoons
thick cut bacon 3 slices, cooked
beefsteak tomatoes 3 slices
pimento cheese 3-4 tablespoons
